choosing between the Island’s best and most characteristic products.
We really think sustainability is a broad concept, it revolves around the ingredients we use, the wastes we create, but it’s also related to the people around us.
That’s why we wanted a small but close-knitted team of friends, working at a slow pace with all the care that characterises our service.
Forcing people into 8 hours shifts didn’t really suit us, we wanted something easy to endure, something that could ignite the passion we have for this place in the people we are sharing it with.
We made that happen and, trust us, it shows.
